  • Quick action buttons showing the number of actions logged for the current day.
  • Options to log temperature records for different stages:
    • Cooking
    • Cooling
    • Reheating
    • Hot-holding
    • Cold Serve

You can set up requirements/targets by editing your location.

Logging a Temperature Record

To log a new temperature record:

  1. Navigate to the ‘Food Temperature Records’ section.
  2. Select the type of record to log (e.g., Cook, Cool, Reheat, Hot-hold, Cold Serve).
  3. A form will appear, prompting you to enter:
    • Food Item Name
    • Internal Temperature
    • Notes (optional)
  4. Click ‘Create Food Log’ to save the record.

This creates a food record item that you can continue recording against or complete the log.

Example Workflow:

  1. After cooking a stew, record its internal temperature.
  2. Choose to finish/serve it or proceed with cooling:
    • Starting the cooling logs the initial temperature and begins a timer.
    • Log the final temperature when cooling ends, then decide on the next action:
      • Serve
      • Reheat
  3. For hot-holding, log multiple temperatures to track its duration (e.g., in a bain-marie).

Viewing Food Temperature Records

Food record items are displayed in a tile layout featuring:

  • The item’s name
  • The start date of the record
  • The initiating employee’s details

Each tile includes a sequence of actions (e.g., COOK, COOLING START/END, REHEAT, COLD SERVE) with:

  • Times
  • Internal Temperatures
  • Employee Details
  • Notes

Below the tiles, you’ll find a chronological list of food record logs for a quick overview of actions taken.

Deleting Temperature Records

For food safety compliance, temperature records cannot be deleted once logged. If a mistake occurs:

  • Log a new record with the correct information.
  • Add a note in the Notes field of both the incorrect and correct records to explain the discrepancy.

You can choose to Archive an item to hide it from your main view while keeping it available for reference.

Regular logging of temperature checks at all stages of food preparation is essential for food safety. Use the ‘Food Temperature Records’ section in Forkto to manage this process effectively.
