Food Temperature Records
The ‘Food Temperature Records’ section in Forkto allows you to log and view the temperature records of your food items during various stages of preparation. This is a vital feature for maintaining health and safety standards in your food business.
The quick action buttons will show you how many actions you have logged for the current day. You can set up requirements/targets by editing your location
Overview of Food Temperature Records Section
When you navigate to the ‘Food Temperature Records’ page, you will find quick actions to log temperature records during cooking, cooling, reheating, and hot-holding stages. You can select the type of record you want to log and fill in the details.
Logging a Temperature Record
To log a new temperature record:
- Navigate to the ‘Food Temperature Records’ section.
- Select the type of record you want to log (Cook, Cool, Reheat, Hot-hold, Cold Serve).
- A form will appear asking for the name of the food item, the internal temperature, and any notes you want to add.
- After filling in the details, click on the ‘Create Food Log’ button. The new record will be added to your food temperature records.
- This will create a food record item, that you can continue to record against, or you can complete the log.
EXAMPLE:
After cooking a stew and recording its internal temperature, you have options to finish/serve it or proceed with cooling. Starting the cooling logs the initial temperature and begins a timer. When cooling ends, log the final temperature, then decide to finish/serve or take further actions like reheating. For hot-holding, log multiple temperatures to track its duration in conditions like a bain-marie
Viewing Food Temperature Records
Food record items are showcased in a tile layout, featuring the item’s name, the start date of the record, and the initiating employee’s details. Each tile displays a sequence of actions (e.g., COOK, COOLING START/END, REHEAT, COLD SERVE) with their respective times, internal temperatures, the employee responsible for each action, and any related notes.
Below the tiles are a list of food record logs in chronological order, so you can get a quick overview of actions taken.
Deleting Temperature Records
Please note, due to food safety requirements, temperature records cannot be deleted once logged. If a mistake was made, you should log a new record with the correct information and make a note of the mistake in the notes field of both the incorrect and correct record. You can chose to Archive an item to hide it from your main view by default.
Remember, logging regular temperature checks at all stages of food preparation is essential for food safety. Use the ‘Food Temperature Records’ section in Forkto to manage this process effectively.
