A further 40,952 premises on the register are awaiting their first inspection and 24,187 are exempt (typically low-risk businesses such as newsagents or childminders), so they do not carry a numeric score. Scotland runs a separate scheme and is reported below.

Source. These statistics are computed from the Food Standards Agency's Food Hygiene Rating Scheme (FHRS) open data, the official public register of food hygiene ratings for the UK. The figures were retrieved on 2 July 2026; the underlying local-authority data carries FSA extract dates between 2026-04-22 and 2026-07-01.
Computation. We downloaded every local authority's published data export and aggregated each establishment's rating. The average rating is the mean across all 485,459 establishments holding a numeric 0–5 rating; premises that are exempt or awaiting their first inspection are excluded from the average. "Below 3" counts ratings of 0, 1 and 2.
Scotland. Scotland's Food Hygiene Information Scheme uses Pass / Improvement Required rather than a 0–5 score, so it is aggregated separately and excluded from the UK average.
