Allergen Management

Learn how to manage allergen information for your menu items and generate allergen matrix reports in Forkto.

The Allergens page in Forkto lets you track which of the 14 major allergens are present in your menu items. You can view your allergen data as a matrix or as individual cards, and export a PDF for display or compliance records.

Overview

When you open the Allergens page, you’ll see two views:

  • Matrix View (default) — a table with your menu items as rows and allergens as column headers. A red dot indicates an allergen is present.
  • Cards View — individual cards for each menu item showing their allergen information.

Use the search bar to find specific menu items, and the ‘Add Menu Item’ button to add new ones.

The 14 Major Allergens

Forkto tracks the 14 allergens required under UK Food Information Regulations:

Adding a Menu Item

To add a new menu item and its allergen information:

  1. Click ‘Add Menu Item’.
  2. Enter the name of the item (required).
  3. Optionally enter the price and any notes.
  4. Toggle the allergens that apply — active allergens highlight in yellow.
    • If you select Cereals with Gluten, an extra field appears to specify which cereals (e.g., wheat, barley, rye).
    • If you select Tree Nuts, an extra field appears to specify which nuts (e.g., almonds, cashews, walnuts).
  5. Click ‘Save’ to add the item.

Editing a Menu Item

Click on a menu item in the matrix or card view to open its details and update the name, price, notes, or allergen selections.

Exporting the Allergen Matrix

To generate a PDF of your allergen matrix:

  1. Click the ‘Export PDF’ button.
  2. A landscape PDF is generated containing:
    • Your business name and the date
    • A complete table of all menu items with their allergens marked
    • A legend showing all 14 allergens with their abbreviations
    • Additional details for cereals and nuts specifications

Use this PDF for display in your premises or as a compliance record.


Keep your allergen information up to date whenever you change a recipe or add a new menu item. Accurate allergen data protects your customers and keeps you compliant with food safety regulations.
